Ever want to impress people?  Homemade ice cream is definitely the way to go!  I love this ice cream recipe for three reasons: (1) because it’s a “no churn” recipe, aka doesn’t need an ice cream machine; (2) because of the subtle honey flavor; and (3) because it can be “soft-” or “hard-“serve!  I technically have an ice cream machine, but the singular previous time that I tried to use it, I didn’t freeze the basin long enough I think and my ice cream got kinda solid, but then was extremely crystallized when put into the freezer.  This recipe does have some crystals, but after blending/food processing it, it dissolves and leaves you with creamy cold goodness.

I always need a good recipe to warrant pulling out my local honey, and this fell into that category.  One of the guys that I used to play volleyball with (he’s since moved unfortunately), used to have some bees at a local bee keep area, and would sell it when he harvested it.  It’s definitely delicious, plus I’m hoping that a little bit of local pollen might help a little with allergies!

Still, if all allergy medication was as delicious as this ice cream, I’d be hopped up on drugs a whole heck of a lot more!  This ice cream is creamy, and smooth, and delivers on the “soft serve” promise of the original recipe.  It doesn’t really keep it’s shape, and melts fast, but is still delicious!  It would be perfect to make thick milkshakes with, but it’s definitely a lot of work for a milkshake.  But if you toss it back into the freezer after blending/food-processing, it’s basically that perfect hard ice cream-parlor style!  You can see the difference of soft vs. hard if you compare the photo from the recipe card (soft) to the featured photo at the very beginning of this post (hard)!

You can top with any of your typical ice cream toppings, but keeping with the natural honey idea, I just drizzled some honey overtop the ice cream, and both Tyler and I really enjoyed it!  The soft-serve is definitely soft and melts easy, and the hard ice cream is definitely hard, and does not really melt without some help.  And if I’m going to put in all the work and effort, I’m glad I can have it any way I’d like!  Try it on top of easy fruit cobbler.  Pictured at the beginning of this post is ice cream on top of an apple cobbler, just swap out the strawberries with some chopped apples sprinkled with cinnamon!
