What is a twix cookie? Well, I’m glad you asked! It’s a shortbread cookie, topped with a sploosh of caramel, and a schmear of chocolate! These are perfect “tea-time” cookies. I don’t know what makes me say that, except that I think it’s the shortbread that makes me think of tea. Though word around the block is that these are pretty amazing dipped in coffee too!
This recipe makes a solid ton of cookies, which is perfect for when you’ve got a busy week and want one chunk of time to spread out deliciousness across various events. That’s what I did–I made the batch, and then some went with me to JMU for an all-day leadership workshop, and then more went into work to share! These would be pretty good for a bake sale too.
I will note that the shortbread is pretty crumbly! So plate or napkin is highly suggested. At least the caramel helps keep the cookie together. I also think I make mine a little too thin and making a thicker cookie could help their robustness.
I really like the additional sweetness that the caramel and chocolate add. I like shortbread, but only can handle small amounts, so the added sweetness really amps these cookies to top notch! Besides, who doesn’t love a twix bar?044 - TwixCookies
