Warm, gooey brie cheese topped with walnuts and pecans, and a drizzle of caramel.  Serve with apple slices for the caramel-apple feel, or toasted crusty bread for some variety.

This is a new go-to appetizer to go with our brand new house ownership!!!!!  We’re not actually moving for a little bit but here’s a perfect housewarming appetizer in the spirit of the day!  Even simpler than brie en croute, but just as delicious!  Plus, if you serve with apple slices, this is a great alternative dessert!  Fruits, cheese, nuts, and just a dash of caramel makes this a healthful dessert!  Well, until you eat the whole thing…but shhhhh.  Just make two, one to share and one to eat yourself!

This time around I used pecans because I knew one of our friends was allergic to walnuts, but I actually think walnuts would be slightly more my taste (slash less expensive).  But it was definitely delicious either way!  If you wanted, you could even add an extra layer of sweetness with some candied nuts, but it really doesn’t need it.

I think next time, I would use granny smith apples for the tartness, but I also like the touch of sweetness of Fuji or Gala apples.  I do suggest not cutting the apples until just before serving, or they will tend to brown.  You can always toss them with a little lemon juice which should help with the browning process, but I always worry that I’ll miss some and I don’t want to worry about it.  Plus it’s a breeze to chop apples, and you can always delegate to that guest that really wants to help out in the kitchen!
