    Has anyone else seen these strange savory “jams” that are a thing now?  I won’t lie, I still think they’re a little strange. Delicious yes, strange, also yes. But I’m a fan!  Especially of anything bacon.  And since maple bacon is also a wondrous thing, I thought this was a great combination! I basically just adapted my tomato onion jam (recipe made for the juicy lucy burger) to use bacon instead of tomatoes, and use maple syrup in addition to some water.     POH-TAY-TOH.  If you know me, you surely know that I’m a carb person.  Like if I could, my entire being would be made out of carbs.  And chocolate.  So being able to whip these potato pancakes (by cooktoria) up at home is dangerous.  Especially to my waistline.  But they’re so worth it!
