So now that Whole30 is done, I’ve been trying something new.  Inspired by some amazing ladies at work and some of Tyler’s family, I decided to join weight watchers and see where it leads.  I’m trying to find something sustainable that will in the short term make me feel great in my dress at our wedding.  But I’m hoping that it will be sustainable for at least some time.

Of course, with a new diet program comes new rules and new products.  Weight watchers is based on a point system, so they’ve boiled down the nutritional content to a single point value.  You have daily points, weekly flex points to use any time over the week, and you can also track fitness points if that’s your thing.  Of course, if you don’t convert fitness points into eating points, you’ll lose weight faster.

But it’s been a little frustrating the first week to take everything I learned on Whole30 and have to toss it in for new foods and new recipes.  Lucky I found this recipe, because I always love spanakopita!  And when you make recipes yourself, you know exactly what goes into them.

In terms of weight watchers points, the recipe I found has 5 points for one square.  If I add up all the ingredients points (have I mentioned the app has a barcode scanner so that couldn’t be easier!) it actually came out to less than four.  I’ll err on the side of over-estimating since that’ll help my waistline, but while I wish it had WAY more cheese, it’s still pretty tasty!  And the best part is that it’s a pretty good option for breakfast too!

Ingredients

  • 30 oz frozen spinach thawed
  • 1 large onion diced
  • 1 cup cottage cheese
  • 1 cup fat free feta cheese
  • ½ cup parmesan cheese
  • 16 sheets filo dough
  • 2 tsp olive oil or oil spray
  • ½ tsp salt
  • ½ tsp pepper
  • pinch of nutmeg

Instructions

  • Grease a 9” x 13” pan with oil or oil spray. Lay down 8 sheets of filo dough, brushing or spraying with oil in between each layer.
  • Allow spinach to thaw and squeeze out water. Set aside.
  • Heat 1 tsp. oil in a pan. Meanwhile, dice onion and sauté until translucent. Turn off the heat and mix in the spinach.
  • Mix in the cottage cheese, feta cheese, parmesan cheese, salt, pepper, and nutmeg into the spinach mixture.
  • Spread mixture out in the pan, and cover with remaining filo dough. Spray with oil spray between each layer.
  • Using a sharp knife, slice into 12 squares taking care not to slice the bottom filo dough.
  • Bake 45 minutes or until top is golden brown. Remove from oven and let stand for 5 minutes. Cut into squares and serve.
