When the holidays roll around, and all those yummy dishes are on the table, sometimes you just need a break! Don’t get me wrong, I looooove traditional holiday foods: mashed potatoes, ham, sweet potatoe casserole, all those yummy Christmas cookies! But sometimes you want to just put it on pause, and take a breather. And I think these meringues are just thing! They’re super light, but the light mint flavor still feels festive. Plus there’s chocolate chips, so it wins all around in my book.
Plus, this is a perfect recipe to make when you are busy using all that egg yolk goodness for other recipes, for example vanilla-honey soft-serve! I hate wasting things, so this is great to keep on retainer for when you have extra egg whites. And you can do this with any number of egg whites, just adjust accordingly! Meringues do not have to be an exact science recipe.
These mint meringues actually remind me of my childhood. We never made them ourselves, but I remember when I was really little, my parents would take my sister and me to a Christmas story reading, and they’d always have a huge spread of cookies at the end. And I don’t really know why, but these mint meringues always stood out to me. I think they were just store-bought, nothing fancy, but they were just so different from all the other Christmas cookies I had experienced before.
