boxed cake cookie bars;

Light and fluffy cookie bars made from simple ingredients including one boxed cake mix, chocolate chips, AND mini m&ms!

I’ve been sick all week.  And all I’ve wanted is comfort food.  So what’s comforting?  Chocolate!  Of course.  I mean this isn’t good for you, but it sure is delicious.  It’s really a cross between a cake and a cookie.  It’s so light and fluffy that it’s not really a cookie, but you can eat it with one hand without it crumbling, and it’s so festive with the chocolate chips and mini m&ms!

Honestly, my thought while making these was “these would be perfect for a bake sale!”.  Which is funny to me because (1) I don’t have children or really know children, and (2) aren’t bake sales a bad thing nowadays?  Now of course I don’t know because of #1, but I thought that schools don’t have bake sales anymore to prevent obesity and things like that.  I do appreciate the sentiment, but I also remember 25cent snacks in school that were always something to look forward to!

I always like to sprinkle more mini m&ms on top to give it an extra pop of color since they often sink into the batter.  Of course, it’s up to you.  You can always use regular sized chocolate chips and regular-sized m&ms, but I tend to prefer the miniature ones.  I bet you could do some experimentation with different chips!  Butterscotch or peanut butter chips would be delicious and give a different kind of spin on this tasty treat!
